A Gluten Free Recipe

Pasta ℅ Cappellos

If you know me, you know I'm not the cook in the family. Most of our marriage Drew has done the cooking and I have been his assistant or dish washer. There are times I cook and you can always count on me to bake, but I prefer to just eat--haha. In the last year or so I have tried to eat healthier and improve my diet so I have found some simple recipes that don't keep me in the kitchen for too long. I still don't enjoy cooking, but I do enjoy making something good to eat.

This is a simple and delicious plate of gluten free, grain free fettuccine by a Colorado based company called Cappellos. The noodles are made with almond flour and egg, giving them a rich buttery flavor. The noodles cook in less than one minute! Once you get the water boiling you throw in the pasta and a few minutes later you have a meal ready. I added pesto to the noodles and sprinkled on parmesan cheese to taste.

Finally, a pasta meal I don't have to feel guilty about eating. You know what's even better? Cappellos also makes delicious chocolate chip cookie dough that has a sneaky taste of sea salt that I loooove. Now I can have my two favorite foods without worrying about my calorie intake, win-win!
